Savory Side Dish: Cauliflower Mash (YES! It’s Paleo)

This recipe is great for a side dish and goes well with just about anything. To spice it up a bit you can add green chile, bacon, or whatever your tummy desires.
1 head of cauliflower
2-4 Tablespoons pastured butter
1 Tablespoon garlic salt
Salt and pepper to taste
-Cut cauliflower (doesn’t have to be in small florets).
-Place cauliflower in a pot of water. Make sure it is fully immersed.
-Bring water to a boil. Let cauliflower cook for ~ 15 minutes. Should be soft and easy to poke with a fork.
-Drain water from pot. Leave cauliflower on low heat, mash with potato masher (or anything else you use to mash with).
-Add butter and seasoning. Mix well.
