Paleo Citrus Flank Steak

I tried a new marinade on some flank steak yesterday, and it came out great, so here is the recipe! Flank steak is near the stomach of the cow and has great flavor, but can be very chewy if it’s not properly marinated and cooked. I served this on a bed of mixed greens, but it also very good with grilled asparagus or zuchini.

Paleo Citrus Flank Steak

2 lbs flank steak

the juice from 3 limes

the juice from 1 orange

1 tbsp raspberry vinegar

4 cloves garlic crushed

1 tbsp brown mustard

chopped scallion for garnish

Combine the lime juice, orange juice, vinegar, and mustard and whisk until smooth. Then add in the garlic. Place this mixture in a large ziplock bag and marinate in the fridge for up to 1 hour. Take the bag out of the fridge and allow it to marinate at room temp for 20-30 min. Preheat the grill to medium/high heat. Cook meat 6-7 min per side. Slice meat very thin and serve with salad greens or grilled vegetables. The key with this meat is the marinade and not to overcook it- it’s best served rare to medium rare. Enjoy! – Emily
