Easy Bacon and Brussel Sprouts

sproutsIf you are like me and have a hard time eating your vegetables I have a very simple and immensely effective way of changing that… Just add a little bacon. Great as a side or appetizer.

What you need:

a couple pounds of brussel sprouts

bacon (quantity is up to you) I could easily use a pound but a more modest approach might be 5-6 slices.

chopped onion

salt, pepper, garlic

How to do it:

Cut the brussel sprouts in half and boil them for 3-4 min

Chop up the bacon and cook until almost done, remove from the pan and place on paper towel. Drain some of the grease but leave a little for the onions and sprouts

Add the onions and cook for a couple of min until transparent, then add the spices and brussels. Cook, stirring well for a few min or until tender.

Toss with the bacon and you are good to go. Mini cabbages with bacon. Yum.
